Butter Mixture
- 6 tbsp. unsalted butter, melted
- 1 tbsp. honey
- 1/4 tsp. kosher salt
Vegetables & Oil
- 1 bunch pencil asparagus, ends trimmed
- 1 tbsp. extra-virgin olive oil
Pastry & Filling
- All-purpose flour, for surface
- 2 sheets frozen puff pastry, thawed according to package directions
- 12 slices prosciutto
- 1 (8-oz.) wheel Brie, cut into 12 pieces
Egg Wash & Seasoning
- 1 large egg
- Freshly ground black pepper
Instructions
- Preheat and prepare baking sheets: Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper to prevent sticking.
- Make butter glaze and toss asparagus: In a small bowl, mix melted butter, honey, and kosher salt until combined. In a medium bowl, toss the trimmed asparagus with extra-virgin olive oil to coat evenly.
- Roll out puff pastry and cut squares: On a lightly floured surface, roll out each sheet of puff pastry one at a time into a 15” x 10” rectangle. Cut each rectangle into 6 squares, yielding a total of 12 squares.
- Assemble bundles: Rotate each square to a diamond shape and brush with the butter-honey mixture. Place one slice of prosciutto on top, folding to fit inside the square. Add a few asparagus spears and a slice of Brie cheese on top.
- Fold pastry and apply egg wash: In a small bowl, beat the egg with a splash of water to create an egg wash. Fold the left side of the pastry over the filling and brush the fold with egg wash. Then fold the right side over, brush the top and sides with egg wash, and season with freshly ground black pepper.
- Bake: Arrange the bundles on the prepared baking sheets. Repeat assembly with remaining ingredients. Bake in the preheated oven for about 15 minutes or until the bundles are golden and the Brie has melted.
- Finish and serve: Remove the bundles from the oven and brush with the reserved butter-honey mixture before serving warm.
