Ingredients
Scale
Chicken Salad
- 2 packed cups (approx 2 breasts) Shredded Chicken
- 2 ribs of Celery, finely diced (adjust to preference)
- 1 cup / 180g Seedless Red Grapes, quartered (adjust to preference)
- 2/3 cup / 80g Walnuts (toasted and crushed, adjust to preference)
- 1/2 cup / 115g Plain or Greek Yogurt
- 1/2 cup / 115g Mayonnaise
- 1 tsp Dijon Mustard
- Dash of Apple Cider Vinegar
- Good pinch of White Pepper
- Salt, to taste
- Pinch of Cayenne Pepper
Garnish & Assembly
- 2 large Apples (red, green, or mixed), sliced into thin rounds
- 1 Lemon (for rubbing apple slices)
- Cress, for garnish
Instructions
- Toast Walnuts: Lightly toast the walnuts in a dry frying pan over low-medium heat until fragrant and slightly charred, shaking the pan frequently to prevent burning. Remove and let cool, then gently crush the walnuts to your desired size using a mug or mortar.
- Prepare Dressing: In a bowl, combine the plain or Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, salt, white pepper, and cayenne pepper. Mix well and adjust seasoning by tasting to suit your preference.
- Mix Salad: In a larger bowl, combine the shredded chicken, diced celery, quartered grapes, toasted walnuts, and the prepared dressing. Stir gently to coat everything evenly.
- Prepare Apples: Slice the apples into thin rounds, ignoring the core to yield about 10 slices per apple. Immediately rub both sides of each apple slice with lemon juice to prevent browning.
- Assemble Bites: Place a generous spoonful of the Waldorf chicken salad atop each apple round. Garnish each bite with a small sprig of fresh cress for a peppery finish and attractive presentation.
