  • 2 ribs of Celery, finely diced (adjust to preference)
  • 1 cup / 180g Seedless Red Grapes, quartered (adjust to preference)
  • 2/3 cup / 80g Walnuts (toasted and crushed, adjust to preference)
  • 1/2 cup / 115g Plain or Greek Yogurt
  • 1/2 cup / 115g Mayonnaise
  • 1 tsp Dijon Mustard
  • Dash of Apple Cider Vinegar
  • Good pinch of White Pepper
  • Salt, to taste
  • Pinch of Cayenne Pepper

Garnish & Assembly

  • 2 large Apples (red, green, or mixed), sliced into thin rounds
  • 1 Lemon (for rubbing apple slices)
  • Cress, for garnish


Instructions

  1. Toast Walnuts: Lightly toast the walnuts in a dry frying pan over low-medium heat until fragrant and slightly charred, shaking the pan frequently to prevent burning. Remove and let cool, then gently crush the walnuts to your desired size using a mug or mortar.
  2. Prepare Dressing: In a bowl, combine the plain or Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, salt, white pepper, and cayenne pepper. Mix well and adjust seasoning by tasting to suit your preference.
