Flank Steak:
- 2 pounds flank steak
Cocoa-Coffee Rub:
- 1/2 cup ground dark roast coffee
- 1 tablespoon dark cocoa powder
- 1 teaspoon brown sugar
- 1/4 heaping teaspoon chili powder
- 1 heaping teaspoon cayenne pepper
- 1/4 heaping teaspoon paprika
Additional:

Instructions
- Mix Dry Ingredients: Put all the dry ingredients (except salt) in a bowl and mix well.
- Prep Steak: Rub salt on the steak and refrigerate overnight if possible, or at least 2 hours before grilling. If short on time, salt right before grilling.
- Preheat Grill: Heat up the grill.
- Season Steak: Rub salt and olive oil onto the steak on all sides.
- Apply Cocoa Rub: Coat the steak with the cocoa rub, ensuring it covers the entire surface.
- Grill Steak: Place the steak on the grill and cook for 6-8 minutes per side.
- Rest and Slice: Remove the steak from the grill, let it rest on a cutting board covered with foil for 10 minutes, then slice into 1/2-inch (12mm) pieces.
- Serve: Serve the sliced steak, optionally with horseradish sauce.
- Storage: Any extra rub can be stored in an airtight container.
