A refreshing and herbal twist on the classic Paloma cocktail, the Grapefruit Rosemary Paloma combines the bright flavors of grapefruit and lime with the earthy essence of rosemary. Perfect for a sunny day or a relaxing evening.

For Rosemary Simple Syrup:
- 1/2 cup water
- 1/2 cup granulated sugar
- 4 sprigs of rosemary, leaves removed, coarsely chopped
For Cocktail:
- 6 oz. tequila
- 8 oz. grapefruit juice + additional grapefruit wedges for garnish
- 2 oz. lime juice + additional lime wedges for garnish
- 6 oz. sparkling water (plain or grapefruit or lime flavored works well)
- Coarse salt for rims (optional)
Instructions
- Rosemary Simple Syrup: Place water, sugar, and rosemary in a small saucepan. Bring to a simmer. Cover and let simmer for 15-20 minutes. You won’t use all the simple syrup for this recipe but it’s a great addition to herbal tea or other cocktails!
- Cocktail: In a cocktail shaker or measuring cup with a spout, shake or stir together tequila, grapefruit juice, lime juice, and 1.5 oz. of rosemary simple syrup.
- Rim Glasses: If adding salt to the rims of the glasses, run a lime wedge around the rims. Pour coarse salt onto a plate and turn the glasses upside down onto the salt.
- Assemble: Fill the glasses with ice, then divide the cocktail mixture between them. Top with sparkling water. Garnish with lime or grapefruit wedges.
