These Gummy Eyeballs are a fun and spooky treat perfect for Halloween parties or themed events. Made with creamy coconut milk and tangy cranberry juice, combined with gelatin to create a gummy texture, and decorated with blueberries for a realistic eyeball effect, these edible eyeballs can be used to decorate drinks, punch bowls, cakes, or enjoyed on their own. They offer a delightful mix of creamy and fruity flavors with a playful twist, easy to make with simple ingredients and minimal preparation.

Liquid Base
- 400 ml coconut milk (one can)
- 100 ml water
- 75 ml cranberry juice (or any juice of choice)
Gelatin and Sweetener
- 6 gelatine sheets (or 4 tsp powder gelatine or 3 tsp agar powder)
- 1 tbsp sugar
Decoration
- 4 blueberries (or dark chocolate balls)
Instructions
- Soften Gelatine: Place one gelatine sheet in a bowl of cold water to soften. Alternatively, measure ½ tsp powder gelatine or ½ tsp agar powder if using agar.
- Prepare Juice Layer: Heat the cranberry juice gently until simmering. Add the softened gelatine (or powder) to the simmering juice and stir until fully dissolved. For agar, add it before cooking and let simmer for a few minutes to activate.
- Form Eyeball Centers: Pour less than a tablespoon of the prepared juice into each mold cavity and add one blueberry or chocolate ball in the center to form the pupil.
- Refrigerate Juice Layer: Place the molds in the refrigerator for at least 30 minutes to set the juice layer.
- Soften Remaining Gelatine: Soak the remaining gelatine sheets (or agar) in 100 ml cold water for 5 minutes to soften. If using powdered gelatine, measure 3 tsp.
- Prepare Coconut Layer: Heat the coconut milk with sugar until simmering. Add the softened gelatine (or powder) to the warm coconut milk and stir until completely dissolved. Agar requires 2-3 minutes simmering.
- Cool Coconut Mixture: Let the coconut milk mixture cool down for 5 to 10 minutes to avoid melting the first layer.
- Fill Moulds: Carefully fill the remaining space in each mold with the cooled coconut milk mixture, covering the juice and blueberry centers.
- Final Refrigeration: Refrigerate the filled molds overnight, or up to 24 hours, to fully set the gummy eyeballs before serving.
