  • 1 tablespoon half and half

  • 1 egg yolk
  • 1 tablespoon water (divided)

Instructions

  1. Thaw Puff Pastry: If the puff pastry is frozen, set it out to slightly thaw for up to 40 minutes. Keep it cold yet pliable enough for rolling out.
  2. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the hand pies.
  3. Prepare Spice Sugar Mix: Combine 2 tablespoons granulated sugar with 1 teaspoon pumpkin pie spice in a small bowl and set aside for topping.
  4. Make Pumpkin Filling: In a medium bowl, whisk together pumpkin puree, 1 whole egg, brown sugar, 1 teaspoon pumpkin pie spice, vanilla extract, salt, and half and half until well combined. Set aside.
