Puff Pastry and Pumpkin Filling
- 4 sheets puff pastry
- 1 cup pumpkin puree (NOT pumpkin pie filling)
- 1 whole egg + 1 egg yolk
- 1/3 cup brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon half and half
- 1 tablespoon water (for egg wash)
Instructions
- Thaw Puff Pastry: If frozen, set out puff pastry sheets to slightly thaw for up to 40 minutes. Keep them cold but pliable enough to roll out.
- Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the hand pies.
- Prepare Sugar-Spice Mixture: Combine 2 tablespoons of granulated sugar with 1 teaspoon of pumpkin pie spice in a small bowl. Set aside for topping later.
- Mix Pumpkin Filling: In a mixing bowl, whisk together the pumpkin puree, 1 whole egg, brown sugar, 1 teaspoon pumpkin pie spice, vanilla extract, salt, and half and half until smooth and well combined. Set aside.
- Roll and Cut Puff Pastry: Roll out puff pastry sheets to about 13 inches long, large enough for three rows of pumpkins. Using a pumpkin-shaped cookie cutter, cut out 24 pumpkin shapes in total from the sheets. Place 12 pumpkin shapes on parchment-lined baking sheets as the bottoms.
- Create Jack O’ Lantern Faces: With a small, sharp knife, cut out Jack O’ Lantern faces into the remaining 12 pumpkin shapes. Lightly roll over each face-shaped pumpkin with a rolling pin to slightly enlarge them to fit over the filled bottoms.
- Assemble Hand Pies: Spoon about 1 tablespoon of the pumpkin filling onto each pumpkin bottom. Lightly brush the edges with water to help seal. Carefully place a face-cut pumpkin on top, aligning edges, and gently press to seal the hand pies.
- Apply Egg Wash and Topping: Whisk the egg yolk with 1 tablespoon water and brush this egg wash over the tops of the hand pies. Sprinkle the sugar and pumpkin pie spice mixture evenly over them for a sweet, spiced finish.
- Bake: Bake the pies for 15 minutes at 400°F until the puff pastry is puffed up and golden brown.
