Sweet Potatoes

- 3 tbsp whipped butter (softened)

- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
Topping
- 1/2 cup unpacked light brown sugar
Instructions
- Prepare the Sweet Potatoes: Peel and boil the sweet potatoes until soft, yielding about 6 cups of cooked sweet potatoes. Drain well.
- Mash and Mix: In a large bowl, combine the cooked sweet potatoes with 3/4 cup of 1% milk, 3 tablespoons of softened whipped butter, 1/2 teaspoon kosher salt, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon ground nutmeg. Mash or puree the mixture until it reaches a smooth and creamy consistency.
- Bake the Mixture: Spoon the mashed sweet potatoes into a 9×9 or 11×7-inch baking dish. Cover and bake in a preheated oven at 350°F (175°C) for about 20 minutes, or until heated through. If baking from refrigerated, extend time as needed to heat the center thoroughly.
- Preheat the Broiler: Set the oven broiler to preheat while the mashed potatoes are baking or just after they are heated through.
- Caramelize the Topping: Evenly sprinkle 1/2 cup of light brown sugar over the top of the hot mashed sweet potatoes. Place the dish about 6 inches below the broiler flame. Broil for approximately 2 to 3 minutes, watching carefully, until the sugar melts and caramelizes to a golden crust without burning.
