Description

These Pumpkin Pistachio Energy Balls are a delicious, no-bake snack that combines the rich flavors of pumpkin pie spices with wholesome nuts and dates. Perfect as a healthy on-the-go treat, they offer a satisfying blend of texture and taste, reminiscent of autumn’s favorite dessert in a convenient bite-sized form.

Ingredients

Scale

Nuts

  • ½ cup raw pistachios
  • ¼ cup raw cashews

Wet Ingredients

  • 10 pitted Medjool dates
  • ¼ cup canned or homemade pumpkin purée
  • ½ teaspoon vanilla extract

Spices and Seasoning

  • Pinch sea salt
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon

Instructions

  1. Prepare nuts: Place ¼ cup of the raw pistachios in a food processor fitted with a metal blade and process until they resemble coarse sand. Transfer this to a small bowl and set aside for later coating.
  2. Grind remaining nuts: Add the raw cashews and remaining ¼ cup pistachios into the food processor and pulse until finely ground, creating the base for the energy balls.
  3. Add wet ingredients and spices: To the ground nuts in the processor, add the pitted Medjool dates, pumpkin purée, pumpkin pie spice, cinnamon, sea salt, and vanilla extract. Continue processing until all ingredients combine into a smooth, sticky mixture. Taste and adjust spices as needed.
  4. Form energy balls: Using a spoon or your hands, scoop and roll the mixture into 9 equal, golf-ball-sized portions.
  5. Coat balls and serve: Roll each formed ball in the reserved coarse pistachios to add texture and flavor. Serve immediately, or store the energy balls chilled in the refrigerator or freezer to maintain freshness.

Notes

  • These energy balls are no-bake and require no cooking, making them simple and quick to prepare.
  • The combination of nuts, dates, pumpkin, and spices delivers a taste reminiscent of pumpkin pie.
  • They can be stored in the fridge for up to a week or frozen for longer preservation.
  • Adjust spices to your preference for a more or less intense pumpkin pie flavor.
  • Use medjool dates for best texture and natural sweetness.
