Description

These Sweet Potato Parmesan Tater Tots are a delicious and crispy twist on the classic tater tot, made with roasted sweet potatoes, parmesan cheese, and seasoned panko breadcrumbs. Baked until golden and crisp, then tossed with fragrant herb butter, they make a perfect appetizer or side dish that is flavorful and comforting.

Ingredients

Scale

Sweet Potato Mixture

  • 4 medium sweet potatoes
  • 1 cup grated parmesan cheese
  • 1 clove garlic, grated
  • Kosher salt and black pepper, to taste

Breading

  • 2 cups Panko bread crumbs
  • 2 teaspoons chipotle or regular chili powder
  • Extra virgin olive oil, for brushing

Herb Butter

  • 4 tablespoons salted butter
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon chopped fresh parsley
  • 2 teaspoons chopped fresh sage

Instructions

  1. Roast Sweet Potatoes: Preheat the oven to 425°F. Prick the sweet potatoes all over with a fork and place them directly on the oven rack. Bake for 50-60 minutes until tender. Remove from oven and allow to cool.
  2. Prepare Sweet Potato Mixture: Once cool enough to handle, peel off the sweet potato skins by hand. Place the peeled sweet potatoes in a medium bowl and mash well. Stir in grated parmesan cheese, grated garlic, and a pinch of kosher salt and black pepper to taste.
  3. Prepare Breading: In a shallow bowl, combine panko bread crumbs with chipotle or regular chili powder. Line a baking sheet with parchment paper.
  4. Shape and Bread Tots: Scoop about 1 tablespoon of the sweet potato mixture and roll it into a cylinder shape. Place it on the prepared baking sheet. Repeat with the remaining mixture. The mixture will be wet, so shape as best as you can. Roll each cylinder in the panko mixture to fully coat, then place back on the baking sheet. Lightly brush or mist each tot with olive oil.
  5. Bake Tots: Bake in the oven for 15 minutes, then flip each tot carefully and bake for an additional 10-15 minutes or until golden brown and crisp.
  6. Make Herb Butter: While tots bake, melt salted butter in a small skillet over medium heat. Add fresh thyme, parsley, and sage, cooking for about 30 seconds until fragrant.
  7. Finish and Serve: Drizzle the fragrant herb butter over the baked tater tots. Serve warm with ketchup or additional herbs if desired.

Notes

  • This recipe uses roasted sweet potatoes to give a naturally sweet base with a crispy panko crust.
  • Using parmesan cheese adds a salty richness that complements the sweet potatoes perfectly.
  • Chipotle chili powder adds a smoky heat, but can be substituted with regular chili powder for a milder flavor.
  • Brush olive oil lightly to ensure a golden, crunchy exterior without deep frying.
  • Fresh herbs in the butter sauce elevate the flavor with aromatic freshness.
  • These tots are best eaten warm on the same day but can be gently reheated in the oven to maintain crispness.
