Description

This meatloaf recipe is a classic favorite, packed with flavor and moistness. The combination of ground beef, onions, and a blend of seasonings bakes to perfection, topped with a sweet and tangy meatloaf sauce.

Ingredients

Units Scale

Meatloaf:

  • 1/2 medium onion, diced
  • 1 teaspoon butter
  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup Italian bread crumbs or seasoned breadcrumbs
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup or chili sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
  • 1 teaspoon kosher salt (more to taste)
  • 1/2 teaspoon black pepper

Meatloaf Sauce:

  • 1/2 cup chili sauce
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar (optional)

Instructions

  1. Preheat the oven to 350°F: Line a rimmed baking pan with aluminum foil and spray with cooking spray.
  2. Cook Onions: In a small pan, cook onions in butter until tender. Let cool.
  3. Prepare Meat Mixture: In a medium bowl, combine eggs, milk, and breadcrumbs. Let sit for 5-10 minutes. Add ground beef, cooked onions, ketchup or chili sauce, Italian seasoning, parsley, salt, and pepper. Mix until just combined.
  4. Bake Meatloaf: Form a 8″x4″ loaf on the prepared pan. Bake for 40 minutes.
  5. Make Meatloaf Sauce: Combine chili sauce, ketchup, and brown sugar. Spread over meatloaf and bake for another 15-30 minutes.
  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Chili sauce adds zesty tanginess to the recipe.
  • Optional additions include Dijon mustard or Worcestershire sauce.
  • Avoid overmixing to keep the meatloaf tender.
  • Use lean meat for flavor without excess grease.
  • Soak breadcrumbs in milk to enhance flavor and moisture.
  • Rest the meatloaf after baking to retain juices.
